1 Tomato (chopped)<br />

Heat oil in a pan and add the veggies to it; sprinkle some salt and green chilies and cook until the vegetables are fried.</p>
<p> Add tomato to it and cook for another 5 minutes. Mix the bread slices and stir well, add tomato sauce and chili sauce to it. Serve the dish hot. </p>

<p>This is a really simple chutney with a sweet and sour note to it. As the chutney cooks the vapour given off has a heady and distinctive smell that will unblock any blocked nose without fail. Serve it with cold meat pies, sliced ham or patés.</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>850g fresh figs (13)</li>
<li>150ml balsamic vinegar</li>
<li>100ml red wine vinegar</li>
<li>300g soft brown sugar</li>
<li>zest and juice of 1 lemon</li>
<li>260g red onions (2)</li>
<li>2 teaspoons mixed spice</li>
<li>10g fresh root ginger or 1 teaspoon of dried ground ginger</li>
<li>1 tablespoon of olive oil</li>
<li>Preparation Time: 10 minutes</li>
<li>Cooking Time: 1 hour</li>
<li>Serves: 2 × jars</li>
</ul>
<p><strong>Corn salsa with purple onion, red bell pepper, jalapeno peppers, cilantro and lime juice.</strong><br />
<strong>Ingredients:</strong></p>
<ul>
<li>2 cups frozen corn kernels, thawed</li>
<li>1/3 cup chopped purple onion</li>
<li>1/4 cup chopped red bell pepper</li>
<li>3 tablespoons chopped fresh cilantro</li>
<li>2 tablespoons fresh lime juice</li>
<li>1 to 2 tablespoons finely chopped jalapeno pepper</li>
<li>1/2 teaspoon salt</li>
</ul>
<p><strong>Preparation:</strong></p>
<p>Combine all ingredients in a small bowl. Cover and refrigerate for 2 to 4 hours. Remove from refrigerator about 30 minutes before serving. Serve corn salsa with grilled meat or poultry.<br />
Makes about 3 cups corn salsa.</p>
